Posted by popular demand! These gluten free oat and plum bars are super simple and delicious to taste – I make them with home made jam, a nifty trick that makes the jam go further. These bars harness the sweetness of gluten free oats and use ground linseed to bind together, in the absence of gluten flour. I like to give the bake an extra five minutes, to really set the mix and allow to completely cool – if you can – before cutting. These bars keep really well as the combination of fudgy jam and moist oats keep the freshness for up to a week.
240g gluten free oat flour
200g gluten free oats
40g ground linseed
2 tsp gluten free baking powder
300g home made plum jam
Preheat oven to 180c. Grease a tray bake tin.
Mix together the dry ingredients. Add the butter in cubes and transfer to a food processor. Blitz intermittently for a minute or so until you have a crumble like mixture.
Press half of the mix into your prepared tin using a firm hand, just as you would if making shortbread – in effect, you’re pressing the mix into a paste.
Smother generously with jam.
Sprinkle the remaining mixture over the jam layer to form a crumble topping. Gently press down, keeping a little of the texture.
Bake for 20-25 minutes until golden brown. Allow to cool and set before cutting.
